Galettes d'ignames

750 g d’igname (une seule suffit)

1 oignon

2 gousses d’ail

1 cuillère à soupe de cives

2 cuillères à soupe de farine

1 œuf

Sel, poivre

 

→   Râper l’igname et le mélanger avec l’ail et l’oignon hachés ainsi qu’avec les cives. Saler, poivrer.

Ajouter l’œuf battu, remuer doucement puis ajouter la farine et mélanger jusqu’à obtention d’une pâte homogène.

 

Huiler une poêle. Pour faire une galette, verser une cuillère de préparation et aplatir légèrement si besoin est. Laisser frire 3 minutes environ de chaque côté jusqu’à ce qu’elles soient bien dorées.

Egoutter  sur du papier absorbant. Remuer la préparation avant chaque fournée.

Servir chaud.
